Since it was autumn the corn was ripe. For supper, now, they often had corn meal cooked in milk. That was good, too. It was so good that Laura could hardly wait for the corn to be ready. Sometimes they had corn for breakfast, with maple syrup. Sometimes her mother fried the corn in pork fat. But Laura liked it best with milk.
However today Laura and Mary had spent the day watching a threshing machine. All the men who worked on the threshing machine would have dinner (lunch*) with them. So they helped their mother prepare a big meal.
A big kettle of cabbage and meat was boiling on the stove; a big pan of beans and a johnny-cake were baking in the oven. Johnny-cake was a type of bread made of corn. Laura and Mary set the table for all the men. They put on wheat bread and butter. There were bowls of cooked pumpkin. Their mother had made pumpkin pies and dried berry pies. They also put cookies, cheese, honey and pitchers of milk on the table.
Then her mother put on the boiled potatoes, cabbage and meat. There were also baked beans, the hot johnny-cake and the baked hubbard squash. Then she poured the tea.
Laura always wondered why bread made of corn meal was called johnny-cake. It wasn't cake. Her mother didn't know, unless the Northern United States soldiers called it johnny-cake because the people in the South, where they fought in the civil war, ate so much of it. They called the Southern soldiers Johnny Rebs. Maybe, they called the Southern bread cake just for fun. (Slang expressions of John- or Johnny- were very common in the 19th and early 20th centuries. Her mother had heard some people say it should be called journey-cake. She didn't know. It wouldn't be very good bread to take on a journey.
At noon the men came in to eat dinner. The table was full of food. However there was not very much, because the men worked very hard and got very hungry.
